Easy delicious potatoes seared then braised in a buttery broth. Tastes as good as they look!

Preheat oven to 400 degrees. Preheat a medium oven safe skillet. I used a medium cast-iron skillet for this. Peel potatoes and trim 1/4 inch off of both ends. Both ends of the potatoes should now be flat. Now cut them into 1-inch-thick rounds. Try to make the potatoes all the same size so that they are finished cooking at the same time.
Place potatoes in the hot skillet and sear both sides of the potatoes, about 4-5 minutes each side.
Now add 1 cup of chicken broth to the skillet and 2 tablespoons of cubed butter. Bake for 15-20 minutes or until potatoes are soft enough to where a knife inserted has no resistance.
Plate and serve. Enjoy!
